I lived in the Middle East for years including several years in Syria.
I really think you need to re-think your Homus(sp?) recipe.
Not sure if it is needing more tahini or what but it is not up to par.
Way too bland!

We ate at your restaurant for the first time. We enjoy many types of food, and yours was pretty good. I would like to offer a few suggestions and hope you are not offended
Use lettuces other other iceberg
The tabouli is cut so fine it is more like paste; did someone use a food processor too long?
The hummus is too watered down, not enough garlic or lemon
Fish spices could be a little more interesting, not just a bunch of paprika
The service was wonderful, the wine was good, the atmosphere was great, prices are reasonable!

I just happened to have stumbled upon a great restaurant
last night. We wanted to try something new and found the
Silver Flame to be just what we were looking for. The food
was plentiful and excellent, the piano bar was awesome,
and though the dance floor was small it provided for a
great time. We will definately be back! Thanks---Tom
